Everyone loves pancakes, so we have decided to create this delicious (and healthy) pancake recipe for you to enjoy with the kids. Pancakes are always a fun and easy option to whip up on special occasions (or even just a lazy Sunday morning), but wouldn’t it be great if we could enjoy pancakes without the added guilt? These whole wheat pancakes are not only delicious, but they’re also a healthy alternative to more traditional pancake recipes. And believe me, the kids won’t know the difference!

This healthy pancake recipe is fantastic as it is, but we decided to make it even better by creating fun animal-shaped pancakes that the kids will surely love. We created five designs, but the possibilities are endless so you can really let your imagination run wild with this one. Children often love helping out in the kitchen, so this is the perfect opportunity to get them involved. We recommend laying out some healthy pancake toppings so they can have fun creating their own designs. For our pancakes, we used banana slices, halved grapes and strawberries to add fun details that really brought the animals to life.

A healthy alternative

Health and wellbeing are our priorities when it comes to cooking for children. So, for this recipe, we wanted to step outside the box and create a unique and healthy pancake alternative without compromising on the taste. To do this, we threw out the processed white flour and opted for wholemeal flour instead. There are plenty of great milk options to choose from, but we went with unsweetened almond milk and used a good dollop of honey to add some natural sweetness.

Ingredients

  • ½ cup almond milk (unsweetened)
  • 1 egg
  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • 1 tbsp honey
  • Your favourite toppings to serve (we recommend fresh fruit such as sliced strawberries and bananas)

Method

  1. In a large bowl, combine the dry ingredients and set them aside. In another bowl, whisk together the wet ingredients. Combine both wet and dry ingredients, whisking as you go.

  2. Pour portions of pancake batter onto a hot griddle (or into a frying pan) and flip once the pancakes are lightly browned. Naturally, the amount of pancake batter you pour will depend on the design you are creating. For our pancake caterpillar, we used small portions of pancake batter to create multiple mini pancakes.

  3. Decorate pancakes with your favourite toppings. This is the fun part! We suggest laying out some options for the kids to have fun while decorating their own.
